KETTLE GRILLS - One of the best grilling devices ever invented because it can be used for all methods of cooking and use either charcoal or wood to provide heat. It is a bowl-shaped metal firebox containing a grill grate with legs and a domed lid. Vent holes on both the top and bottom provide excellent heat control.
BASIC GAS GRILLS - Usually a large single burner grill using propane or natural gas containing a grill grate and usually comes with an electric motor driven rotisserie. The heat control is provided by the valves controlling the amount of gas avaiable to the burner(s).
GAS SUPERGRILLS - Usually a large multi-burner grill using propane or natural gas with one or more side burners and often equipped with a smoker box with a dedicated burner and/or a rotisserie with its own burner. Some can even burn charcoal and/or wood in addition to gas.
FRONT-LOADING GRILLS - Usually a large metal box on legs with a hinged door in the front for adding either charcoal or wood fuel. The advantage of the door is that if you need more fuel while barbecuing, you don't have to lift the grill grate which usually dumps some food where it doesn't belong. It is possible to find front-loaders that come with a hinged door much like the old-style built-in barbecue grills that were basically two platforms-one to hold the wood or charcoal fuel and another to hold a grill grate or grill plate.
CERAMIC EGG COOKERS - The beauty of an egg-shaped ceramic cooker is the fact that the charcoal fire is built at the bottom transferring heat into the ceramic firebox and dome which absorb the heat and radiate it throughout the unit creating even moist cooking combing the attributes of both direct and indirect grilling. Great for larger cuts of meat.
ELECTRIC GRILLS - Ideal for grilling inside an apartment or condominium where open flame would be dangerous. Also handy in inclement weather and for appetizers.
FORMAN STYLE GRILL PANS - Gas or electric grill pans or contact grills which are useful for cooking inside and for small or thin pieces of food.
TABLE GRILLS - Usually used for large groups for direct grilling or spit roasting. Simply a large flat metal tray or shallow box mounted on legs with an adjustable grill grate height and usually a rotisserie. Can be charcoal or gas fired.
HIBACHIS - Small, deep cast iron grill using charcoal to grill small or thin foods quickly.
OFFSET BARREL SMOKERS - Using charcoal or wood, these units are modeled after large commercial varieties and are either barrel or box-shaped smoke chambers that run either vertically or horizontally with a separate offset firebox. Great for large cuts, whole turkeys or hogs.
WATER SMOKERS - Vertical metal cyclinders with a charcoal pan or electric heating unit at the bottom with a water pan in the center for moisture and cooking rack(s) at the top. The water pan can be used with a variety of liquids to add moisture and flavor.
COMMERCIAL SIZE SMOKERS - Used by caterers, professional barbecue competitors and serious barbecuers, these can be any size, shape and design. Most are designed to provide maximum heat control flexibility, smoke flow and often have rotating shelves.
