Chasen's Chili Recipe
Wash & soak 1 lb (2 2/3 cups) pinto beans overnight
Add:
1/2 cup real butter
2 1/2 lb ground chuck
1 lb ground pork
Sautee together for about 15 min. while adding:
1 1/2 tbs cumin seed
1 1/2 tbs MSG (Accent)
1 1/2 tsp crushed black pepper
1/2 cup chili powder
Add:
1/2 tsp oil
1 1/2 lb green peppers
1 1/2 lb chopped onion
Cook mixture separately until tender,
(about 10 min) stirring often while adding:
3 chopped garlic cloves
1/2 cup chopped parsley
Add:
1 lb pinto beans (2 2/3 cups)
1 28 oz & 1 16 oz cale of whole tomatoes
Cook together for about 5 min.
Add the meat mixture to the bean mixture and simmer
for 1 hour while covered with a lid
Remove the lid and simmer for another 30 minutes
Skim off any excess grease from the surface & serve. And by the way, Chasen's chili always tastes better if you let it age for a few days in the refrigerator so that the spices can become more flavorful...
